In Sabae, Fukui, a junmai-only house perfected 'ice-temperature aging' — and took the technique to international acclaim.
Kato Kichibee Shoten has brewed Born in Sabae, Fukui for more than 130 years, making nothing but hand-crafted, additive-free junmai sake. The house developed its own ice-temperature aging process — maturing sake at just above freezing — to draw out an elegant character from some of the most highly polished rice used anywhere in Japan. The approach has earned Born numerous international awards. A direct-sales shop at the brewery is open on weekdays and Saturdays.
