The Story of 敦賀酒造

Tsuruga Shuzo, founded sometime in the Edo period, was for generations the only sake brewery in the port city of Tsuruga, Fukui, working out of Aioi-cho. It closed in 2005, ending sake production in the city. Local residents pushed for its revival, and Tsuruga natives have since founded a new company, Tsuruga Kehi Shuzo, which is beginning to sell new sake made with local rice and pine needles associated with Tsuruga.
