The Story of 久保田酒造

Fukukoma Shuzo was founded in 1754 in Sakai, Fukui, when the local village headman, Kihei Kubota, was ordered by Masazumi Arima, then lord of Maruoka Castle, to begin brewing sake on his own land. Generations on, the house still follows the old brewing proverb passed down through that history — koji first, then the yeast starter, then the mash — and it aims above all for sake that finishes clean and carries genuine flavor.
