An owner-toji brewing bottle by bottle in the old post town of Imajo.
Kitazen Shoten, in the Imajo district of Minamiechizen, Fukui, brews under the motto that local sake is the work of its local climate. The owner doubles as master brewer, making each bottle by hand with a focus on savoury depth that never tires the palate. Its Hijiri no Miyo label runs to a junmai daiginjo and a long-aged, low-temperature-matured daiginjo. Tours with tasting by reservation.
