In Eiheiji, Yoshida Shuzo starts each bottle in the soil, growing its own rice before it ever reaches the kura.
Yoshida Shuzo has brewed in Eiheiji, Fukui since 1806, holding to a philosophy that scale matters less than quality: better to stay small and brew well. The house takes that commitment all the way back to the rice paddy itself, working the soil on its own and contracted fields before the grain ever reaches the kura. Its lines run from the flagship Hakuryu to Yu and the more modern-facing DRAGON KISS label, each brewed from rice the house had a hand in growing.
