A brewery founded in 2017 to revive a town, its Kamikawa cellar shaped with chef Kiyomi Mikuni.
Kamikawa Taisetsu was founded in 2017 as a project in regional revival, and its original cellar, Ryokkyu-gura, sits in Kamikawa, the town whose name it carries into every bottle. The brewery insists on Hokkaido-grown rice for its Tokubetsu Junmai, Junmai Ginjo and Junmai Daiginjo lines, and has collaborated with chef Kiyomi Mikuni to bring the region's terroir to wider attention. Visitors cannot enter the brewing floor itself for hygiene reasons, but an outdoor viewing window and an on-site gift shop, open through the milder months, let travelers see the cellar and taste what it makes.
