Sapporo's only sake brewery, founded beside the Sosei River by a Noto craftsman in 1872.
In 1872, Yojiemon Shibata carried his brewing skill north from Noto, in Ishikawa, and began making sake on the banks of Sapporo's Sosei River — the city's only sake brewery to this day. Nipponseishu now brews entirely with Hokkaido-grown rice, including the aromatic Suisei variety used in its Junmai Daiginjo. The Chitose Tsuru Sake Museum keeps that history alive, with sake tastings, a shop selling brewery-limited and unfiltered draft sake, and sake-lees soft serve. Weekday brewery tours run for small groups by advance reservation only, and pause around August each year.
