An Otaru brewery that brews all year round and sells its sake only within the city.
Founded in 1899 in Otaru, Hokkaido, Tanaka Shuzo brews Takaragawa. It is a shiki-jozo kura, brewing through all four seasons rather than in winter alone, as most Japanese breweries do. Its range is built entirely on junmai — sake made from nothing but rice, water, koji (the mold that converts starch to sugar) and yeast — from a junmai polished to 70% using only Hokkaido-grown sake rice, up through a junmai ginjo at 60% and a junmai daiginjo milled all the way to 35%. Distribution stays deliberately close to home: the sake is sold only within Otaru.
