Kagoshima's modern shochu icon, its lychee-bright aroma known worldwide simply as DAIYAME.
Hamada Shuzo, distilling in Ichikikushikino since 1868, is also the house behind DAIYAME, a modern imo (sweet potato) shochu built around a bright, lychee-like aroma that broke from the earthier profile shochu is traditionally known for. The brewery's Denbei-gura offers reserved tours, up to twenty people twice a day, with a tasting of three shochu and a souvenir glass included, plus an on-site shop and restaurant. On weekends its Kinzan-gura cellar, a former mine tunnel, runs trolley tours through the underground shochu stores, also by reservation.
