Hananoka Shuzo, founded in 1902 in Nagomi, Kumamoto, brews under the philosophy of ubusuna — the land of one's birth. A domaine kura growing rice in its own fields, it works with natural farming, heritage rice varieties and local groundwater toward sake that could come from nowhere else. Its two pillars, Hananoka and the nationally watched Ubusuna, carry the idea. Tours by phone reservation, with tastings and kura-only bottles.
