Since 1896 — 山鹿市, Kumamoto
A century of Yamaga brewing, with its own rice variety and a free sake museum.
Chiyonosono Shuzo, founded in 1896 in the hot-spring town of Yamaga, has spent over a century devoted to one thing: sake worth drinking. Its attachment to rice runs deep — the house even developed its own variety, Kyushu Shinriki — and it has taken gold at the Annual Japan Sake Awards several times. The brewery museum is free to visit, with a shop and a standing bar at the kura.
