Nishinoseki — five flavours in harmony, inside a cultural-property kura.
Kayashima Shuzo, founded in 1873 on the Kunisaki Peninsula in Oita, brews Nishinoseki to an ideal beyond sweet or dry: the harmony of all five tastes — sweet, sour, spicy, bitter and astringent. Its Taisho-era brewery buildings and chimney are registered National Tangible Cultural Properties. Tours run 13:00–16:00 by reservation, and the Sake Gallery Tozai offers weekday tastings and sales.
