Since 1906 — 由布市, Oita
A family-run Yufuin brewery whose 1968 well-drilling accidentally struck a hot spring, now a working onsen.
Ono Shuzo has run as a family business in Shonai, Yufu City, since 1906, drawing on the springs and natural surroundings of the Yufuin area. Rather than sake, the small rural kura focuses on mugi (barley) shochu and liqueurs made from local farm produce, preserving methods passed down since its founding. In 1968, while drilling a well for diluting its spirits, the brewery struck hot spring water — and by 1980 had converted the discovery into Onoya Onsen, a working hot spring bath.
Mugi shochu, 25% ABV
