A Bungotakada brewery whose name borrows sumo's old top rank, still bottling patiently aged sake by appointment.
Yamada Shuzoba has brewed in Bungotakada since 1898. Its label, Toyonoseki, takes its name from the highest rank in Meiji-era sumo, chosen in the hope of becoming the very best of Bungo province. Today the brewery focuses on hi-ire (pasteurized) storage, aging sake slowly before bottling it for sale. Visits are welcome by appointment, for up to two guests at a time, alongside direct sales from the kura itself.
