A Gyoda brewery an Omi merchant founded chasing good water, now a repeat gold medalist at Japan's top sake competition.
Yokota Shuzo was founded in 1805 by Yokota Shoemon, a merchant from Omi Province who settled in Gyoda in search of good brewing water. The kura draws soft water from the Chichibu stretch of the Arakawa river system and works primarily with Yamada Nishiki rice from Hyogo and Miyama Nishiki from Nagano. Over the past decade, its sake has won gold medals nine times at Japan's National New Sake Awards.
