A century-old Hirosaki junmai-only brewery drawing water from the Shirakami range and Mount Iwaki.
Founded in 1918 in Hirosaki, Aomori, Matsu Midori has spent more than a century brewing exclusively junmai sake, with no added brewing alcohol. Its water comes from the underflow of the Shirakami mountain range and Mount Iwaki. The kura's lineup includes the Junmai Daiginjo Rokkon series and Matsu Midori Bekkaku, made with Yamada Nishiki rice polished to 40%, and its sake has recently been recognized at Kura Master and the IWC's SAKE category.
