Aomori City's only sake kura, famous nationwide for Denshu — rice and water, nothing else added.
Nishida Shuzoten, founded in 1878, is the only sake brewery within Aomori City. Its best-known label, Denshu, is brewed as pure junmai — rice, water, koji and yeast only, with no added distilled alcohol or sugar — a stance that helped carry the kura's reputation across Japan. Alongside Denshu, the kura also produces Kikuizumi, a daiginjo, and Sotogahama, a junmai ginjo named for a nearby coastal town. Every step, from koji-making to pressing, is still done entirely by hand.
