The only kura in Japan brewing with Houhai rice, a family operation since 1930 near Mt. Iwaki.
Miura Shuzo was founded in 1930 in Hirosaki, Aomori, and incorporated in 2007, drawing its brewing water from the spring-fed slopes of Mt. Iwaki and the Akakura range. It is the only brewery in Japan that makes sake with Houhai rice, a locally contracted varietal, working in small, careful batches as a close-knit family and staff. Its guiding principle is wajou ryoshu — good sake made in harmony.
Junmai Daiginjo, gravity-dripped (tsurushi) pressing — polished to 39%, Yamada Nishiki rice

Tokubetsu Junmai — koji rice polished to 55%, kake rice to 60%, Houhai rice
