Kyushu's first all-junmai brewery, carrying the Mizuma-toji tradition through four generations.
Morinotsuyu was founded in 1898 and relocated in 1920 to its current site in search of better water, in Mizuma, part of Kurume, Fukuoka. The Mizuma-toji brewing tradition here has passed from parent to child across four generations, and in 2005 the kura became the first in Kyushu to convert entirely to junmai sake, brewed only from rice, koji and water. Its brewing water is soft groundwater drawn from beneath the kura, supporting a house style built around "sake within a meal."
