Since 1992, a Chikugo brewery has grown its own ancient red, black and green rice to brew a sake found almost nowhere else.
Noda Shuzo has brewed in Chikugo, Fukuoka since 1912. Starting in 1992, the brewery began cultivating ancient rice varieties — red, black and green — in its own paddies, and now makes and sells Kodai Akamaishu, sake brewed from that ancient red rice. Few breweries grow all three ancient rice colors themselves. The kura does not offer tours, but sells its sake alongside the ancient rice and mixed-grain rice it grows.
