Shigemasu — three centuries of koji-first brewing in the tea country of Yame.
Takahashi Shoten was founded in 1717 in Yame, Fukuoka, and has brewed its Shigemasu label for over three hundred years. The house builds its sake on koji above all, made in traditional wooden koji rooms with Fukuoka-grown brewing rice — refined sake meant for the table, in step with the local food culture. Tours are offered on weekdays by reservation.
