A small Fukuoka kura that revived itself after wartime closure and still presses every batch the old-fashioned way.
Founded in 1878 in Miyama, Fukuoka, Tamamizu Shuzo paused brewing during the war before merging with the Yamashita brewery in 1956 to start again. The kura holds to natural fermentation and presses its sake using the same funashibori (traditional wooden-vat pressing) tools and method it has used since its founding. Rice comes from local contract farmers, and the brewery also makes a Junmai Daiginjo called Shinriki, brewed from the rare heirloom sake rice of the same name.
