The Gunma house that used bottle fermentation to invent the world's first sparkling sake, in 2008.
Nagai Sake was founded in 1886 in Kawaba, Gunma, after founder Nagai Shoji came upon natural water flowing from Mt. Hotaka. The brewery draws its water from the peaks around Oze and uses top-grade contract-grown rice, and in 1992 it launched Mizubasho, a quality-focused label built on that idea. In 2008 Nagai developed MIZUBASHO PURE, the world's first sparkling sake made through bottle fermentation — an innovation born from blending traditional craft with the latest equipment, an approach the brewery calls Nagai Style.
