A pioneer of junmai sake since 1972, still refusing to carbon-filter away its natural amber color.
Kamoizumi Shuzo was established in Taisho-era Hiroshima, in 1912, and preserves techniques handed down through generations of Hiroshima toji. The brewery skips activated-carbon filtration, leaving its sake with a rich flavor and a natural amber (yamabuki) color. In 1972 it released Honjikomi Kamoizumi, an early pioneer of all-rice junmai brewing before the category was formally recognized in Japan.
Junmai Ginjo — polished to 60%, Hiroshima Hattan and Nakate Shinsembon rice, 16% ABV
Junmai Daiginjo — polished to 40%, 100% Yamada Nishiki grown in Higashihiroshima's Zoga district, 16% ABV
Junmai — polished to 70%, 100% Yamada Nishiki grown in Higashihiroshima's Zoga district, 15% ABV
