A Takehara brewery that calls its own walls a living ecosystem — and switched entirely to kimoto brewing in 2023.
Fujii Shuzo treats its wooden kura in Takehara, founded in 1863, less as a building than as a living vessel, where koji mold, yeast and lactic bacteria have been passed down through the beams, earthen walls and floorboards for generations. In 1907, its Ryusei took the top prize at Japan's first National Seishu Fair. Since 2023 the brewery has converted entirely to kimoto brewing, and as of 2025 ferments using only its own kura-resident yeast. Set in Takehara's preserved old-town district, its Sakagura Koryukan welcomes visitors for free tastings, sales and a soba restaurant.
