The Saijo brewery once nicknamed a 'sake school,' its 25-meter chimney still marking the sake district skyline.
Fukubijin Shuzo was founded in 1917 in Saijo, Higashi-Hiroshima, a district once nicknamed the 'Saijo Sake Brewing School' because toji came from across Japan to learn its methods — making it a historically important source of Hiroshima's brewing technique. Its direct-sales shop, Ebisu-gura, is marked by a roughly 25-meter chimney, and beyond sake the brewery sells products made from its own sake lees, including soap and gelato.
