A Takehara kura whose own apple yeast pioneered the fruity, fragrant ginjo style decades ago.
Founded in 1871 in the center of Takehara, Hiroshima, this brewery makes Seikyo, a name meaning "sake as clear as a mirror of sincerity." It developed its own apple-derived yeast and was an early pioneer of fruity, fragrant ginjo sake made with it. Its flagship label, Maboroshi ("Phantom"), carries the bright, floral aromatics that yeast produces.
