A 500-meter mountain kura in Hiroshima where the 15th-generation owner-brewer revived centuries-old kimoto brewing in 2018.
Founded in 1716, Shinrai brews at roughly 500 meters elevation in Jinsekikogen, Hiroshima, where 15th-generation owner-brewer Yuji Miwa draws on two wells — one soft, one medium-hard — and local Senbonnishiki and Hattannishiki rice. Aiming for sake with rich rice flavor and a clean finish, the kura revived kimoto brewing, an Edo-period method using naturally occurring lactic bacteria, in 2018 after years without it.
