The Mihara brewery whose ultra-soft mountain water won painter Yokoyama Taikan's lifelong devotion.
Suishin Yamane Honten has brewed in Mihara, Hiroshima, since 1860. Its sake, Suishin, was the lifelong favorite of the painter Yokoyama Taikan, who called it 'a work of art' — works he donated now fill a memorial hall connected to the brewery. The kura draws on ultra-soft water (hardness 14) from the foothills of Mt. Takanosu, fermented slowly at low temperature for a fine-grained, gentle sweetness. In 1912 it took first place at the second National Sake Competition, and after three consecutive superior awards in the Taisho era it received a Meiyosho honor award — a distinction Suishin alone earned for three straight wins.
