Kamitaka sake, a revived Muromachi-era starter, and whisky by the sea since 1679.
Eigashima Shuzo, founded in 1679 in Akashi, is a rare all-rounder: sake under its Kamitaka label, plus shochu, wine and whisky. It brews Banshu rice from the local plain with groundwater filtered through Rokko granite and coastal shell layers — a water whose savoury character the house calls gokumi. It has even revived mizumoto, a Muromachi-era starter method, in a junmai sake. Weekly reserved tours (about 1.5 hours) take in the sake kura, whisky distillery and museum, ending in the tasting room.
