A Kasai brewery that went 100% junmai in 1992 and, since 1996, brews only with rice grown in its own city.
Fukunishiki has brewed in Kasai, Hyogo, since 1839 under the idea of junmai sake shaped by the climate and people of Harima. In 1992 it converted its entire output to junmai — abandoning added brewing alcohol altogether — and from 1996 it has used only rice grown locally in Kasai, making it a thoroughly local-sourced junmai house. The brewery makes two lines, Fukunishiki and Junsei, and runs its own shop-and-restaurant, Fukugura, where visitors can browse and dine.
