The Nishinomiya house chosen as the sole supplier of sacred sake to Ise Jingu, still brewing entirely in-house with kimoto technique.
Founded in 1862 by Tatsuuma Etsuzo, Hakutaka is the only brewery selected to supply goryoshu, the sacred sake offered at Ise Jingu. The house brews everything itself and keeps alive the traditional kimoto method of building yeast starters by hand. Its sake is made with miyamizu, the mineral-rich water of Nishinomiya, and Hyogo-grown Yamada Nishiki rice, yielding a dry style. At Hakutaka Rokusuien, visitors can browse a shop, a museum and a tea room, and visit a sake bar, open 11:00 to 19:00.
