Since 1900 — 神戸市東灘区, Hyogo
A Nada brewery formed by an Edo-era craftsman's line, where visitors watch four seasons of brewing through glass.
Hamafukutsuru stands in Uozaki, one of the sake districts of Nada, its lineage tracing back to a craftsman named Koyamaya Matabei who trained in Nada in the late Edo period. In 1989 the earlier house, Fukutsuru, merged with Oyama Honke Shuzo to form the brewery as it exists today, brewing dry, deep sake with natural groundwater drawn from Mt. Rokko. Its Ginjo Kobo facility lets visitors watch brewing through glass across all four seasons, with free admission, tastings of freshly pressed sake and limited-edition bottles for sale, open 10:00 to 17:00, closed Mondays except public holidays.
Junmai Daiginjo — polished to 45%, Hyogo-grown rice; refined aroma, smooth texture
Daiginjo — Bizen-grown Omachi rice
Junmai Ginjo — brewed with Nada's celebrated spring water
