A Himeji brewery that spent 20 years studying soil science to pursue Japan's first true sake terroir, grown entirely in Hyogo's top-rated Yamada Nishiki districts.
Founded in 1921 in Himeji, Hyogo, Honda Shoten built its philosophy — good sake starts with good rice — into two decades of soil research on the prefecture's Special-A Yamada Nishiki districts, making it, by its own account, Japan's first terroir-focused sake brewery. The house works exclusively with rice from the Special-A areas of Yashiro, Tojo and Yoshikawa, backed by soil studies conducted with a graduate school at Kyoto University. Its Kome no Sasayaki label has won gold at the National New Sake Awards 28 times in total.
