Taiyo Shuzo, a family-run brewery in Okubo-cho, Akashi, Hyogo, brews under the banner of "rebellion against tanrei karakuchi" — the light, dry style long dominant in Japan — making instead only nojun karakuchi (rich, dry) sake that foregrounds rice's own umami. Every grain of rice is Hyogo-grown sake rice, and every bottle is muroka genshu: unfiltered and undiluted, without carbon filtration or any of the "cosmetic" adjustments common elsewhere.
