Tajime has brewed in Yamato-cho, Asago, in Hyogo's Tajima region since 1702, under the guiding belief that "even a single grain of rice holds infinite power." The kura mills only local rice and ferments exclusively with yeast No. 7, sourcing every grain from contract farmers within 30 kilometers of the brewery in Asago and Toyooka. That commitment to hyper-local ingredients supports Chikusen's style: a rich Junmai built to be savored alongside food.
