A 350-year-old Harima brewery pursuing "umami and crispness rooted in Banshu terroir," now also applying its fermentation science to biotech.
Founded in 1666 in Harima, Hyogo, Yaegaki Shuzo has brewed for more than 350 years using Hyogo-grown Yamada Nishiki rice and Senju no Mizu, spring water drawn from the Hayashida River. Its sake is brewed by traditional winter methods and aims for what the brewery calls umami and crispness rooted in Banshu terroir — food-friendly sake built for the table. Beyond sake, Yaegaki has extended its fermentation expertise into biotechnology and functional-food businesses, and in 2018 launched Hasegawa Eiga, a new premium label.
