An Asagiri shochu house that grows its own rice and traces its name to a founder's love for clear mountain water.
Matsu no Izumi Shuzo, in Asagiri, Kuma District, Kumamoto, began when founder Matsuoka Bunsuke fell for the local water and started brewing what was known as 'Matsuoka's shochu' — later renamed Matsu no Izumi. The brewery manages everything from water sourced at Mt. Shirakadake to the rice itself, with its own staff cultivating rice in the company's paddies. Its Kuma shochu carries a WTO-recognized geographical indication.
