A Kumamoto kura in Kawajiri brewing both modern seishu and Higo's traditional red sake, Tohi Akazake.
Zuiyo was founded in 1867 in Kawajiri, in what is now Kumamoto City, and brews both ordinary seishu and Tohi Akazake, a traditional red-tinted sake specific to the old Higo province. In June 2026 the brewery opened a new dedicated facility, Zuiyo Masu Okura, and has picked up multiple honors, including at the Tokyo Whisky & Spirits Competition (TWSC) 2026 and the Wine Glass Sake Award 2026.
