A Kuma shochu house in Kumamoto's mountains, still fermenting rice spirit in centuries-old earthenware jars.
Tsutsumi Shuzo has distilled kuma shochu — the rice spirit unique to the Kuma valley of Kumamoto — since 1878 in Asagiri, a district with a shochu-making tradition said to run over 500 years deep. The brewery still ferments in kame, traditional earthenware jars, with technique passed from one toji to the next. Drawing on the clean water of the Kuma River, the district holds WTO geographical-indication protection for its shochu.
