Northern Alps snowmelt and contract-grown rice, brewed in Matsumoto.
Daishinshu Shuzo of Matsumoto brews with snowmelt water of the Northern Alps and rice grown in close partnership with contract farmers — a kura that puts the toji's hand and tradition at the centre. Its range runs from flagship junmai daiginjo to the premium Gakuho Matsumoto line and The Azusa, which appears in a sherry-cask variant. A tasting room operates (confirm ahead).
