The only Nagano brewery brewing with 'flower koji,' a rare strain it has used for over 40 years.
Nishiiida Shuzoten has brewed in Shinonoi, Nagano, since 1865, and for more than four decades has held a rare distinction: it is the only brewery in Nagano prefecture to use hana-koji, a distinct koji mold strain nicknamed for its flower-like spore shape. Beyond sake, the house also produces wine and cider, extending its fermentation craft across categories. Its Sekizen label spans a house Junmai Ginjo, a straightforward Junmai for everyday drinking, and a flagship Daiginjo, each carrying the imprint of the region's terroir.
