A 360-year-old Ueda brewery whose Shinshu Kirei has become one of the most talked-about labels in Japan in recent years — best sampled by staying at its own sake-brewery hotel.
Founded in 1665 in Ueda, Nagano, Okazaki Shuzo brews Shinshu Kirei, a label that has surged in national popularity in recent years. The brewery does not offer tours of the kura itself, but runs KIREI, a hotel built around the brewing experience, along with a direct-sales shop for its sake. Rice for the lineup is sourced locally, including Nagano-grown Hitogokochi for one of its junmai bottlings.
