A hidden brewery in the karst country of Maniwa, drawing calcium-rich cave water beside a firefly-lit stretch of river.
Ochi Shuzojo has brewed since 1893 in Maniwa, a corner of Okayama that once linked the old provinces of Bicchu and Mimasaka as a waystation town. The area conceals limestone caves — Suwa-no-Ana and Makido among them — registered as natural monuments, and the Bicchu River behind the kura hosts one of Japan's longest firefly displays each late May and June. The brewery draws its water from this karst plateau, a mineral spring rich in calcium, magnesium and phosphorus, letting the local soil and climate speak through every batch.
