Gozenshu — Omachi rice and a woman toji in the castle town of Katsuyama.
Tsuji Honten, founded in 1804 in the castle town of Katsuyama in northern Okayama, brews Gozenshu — sake once presented to the local lord. Under toji Maiko Tsuji, one of Japan's noted women master brewers, the house makes rich, clean-cutting dry sake; seventy percent of production is junmai, from Okayama-grown Omachi rice and subsoil water of the Asahi River. Its GOZENSHU 9 (NINE) revives the ancient bodaimoto starter. A shop is open daily except Thursdays, with brewing-experience programmes by reservation.
