A Kurashiki mirin house at the birthplace of the Bicchu toji tradition, brewing peach wine within earshot of the Seto Inland Sea.
Senoo Shuzo Honten brews in Tamashima Minami-no-ura, Kurashiki — an inlet ringed by mountains on three sides and open to the Seto Inland Sea, long known as the birthplace of the Bicchu toji brewing tradition. Founded in 1907, the house today focuses on hon-mirin and fruit liqueurs, made within sound of the sea's waves, carrying forward techniques passed down from the founder's descendants. Its Okayama White Peach Wine, made with locally grown peaches, remains a signature product alongside its aged, additive-free mirin.
