Kanbai — 200 years of small, careful brewing in Kuki.
Kanbai Shuzo, founded in 1821 in Kuki, Saitama, keeps to brewing small enough for every batch to pass under the brewers' eyes and hands. It works local rice — Sai no Kagayaki and the prefecture's own Sake Musashi — into its Kanbai label, and drips its Hishoten daiginjo through the traditional hanging-bag method. Tours by reservation.
