An Ogose brewery drawing river water behind its walls to hand-craft small batches near one of Kanto's great plum groves.
Founded in 1844 in Ogose, Saitama — home to Ogose Bairin, one of the Kanto region's three great plum groves — Sato Shuzoten draws its brewing water from the clear underflow of the Ochi River just behind the kura. Following the motto of crafting a 'rounded sake with a light finish,' the brewery uses small tanks and hand-based methods for its labels, Ogose Bairin and Nakadaya.
