A small Kazo kura that has kept to hand-crafted, many-varieties brewing for over 140 years.
Shimizu Shuzo was founded in the early Meiji era in Kazo (formerly Kisai-machi), Saitama, and has brewed there for more than 140 years. Its guiding policy is simple: stay small enough to hand-make distinctive, high-quality sake, producing many varieties in small volumes rather than a few in bulk. Its representative label, Kikko Hanabishi, takes its name from the Shimizu family crest.
