Pure malt finished in mizunara, chestnut and sakura, on Harie's living water.
Biwako Distillery, established in 2020 as Shiga's second whisky distillery, is run by the sake brewer Kawashima Shuzo. It brews with Harie no Shozu — a Heisei hundred-famous-waters spring — and finishes its pure malt in an unusual sweep of casks, from mizunara to chestnut and sakura. Distillery tours are not offered.
